Super versatile granola recipe! The recipe below is how I make it, but you can adapt it to your preferences. I would recommend at least 1 cup of your choice nuts/seeds, and 1 cup dried fruit of your choice or coconut flakes. Maple syrup can be substituted with honey. Option of adding chocolate chips and/or cinnamon, and more or less salt depending on how you like it. I would love to hear how you make it your own!
Ingredients:
1.5 cups of steal cut oats
1/2 cup chopped almonds
1/2 cup pumpkin seeds
1/2 cup coconut flakes
1/2 cup dried berries
1/2 teaspoon salt
3 tablespoons olive oil
1/3 cup maple syrup
1 tablespoon vanilla
Directions:
preheat oven to 350F
combine all ingredients
spread flat on parchment paper lined baking sheet
bake for 30-35 minutes, stirring after 10
let cool before breaking into chunks
granola can be stored in air tight container for up to a week
